      The Iberian pig is a variety, resulted of a careful selection made throughout history and from time immemorial in order to achieve a better adaptation to the conditions of ecological area of the Dehesa.

      These fats, which give the distinctive veining, prevent dehydration and also provide juiciness and tenderness to the products thanks to its presence, are regarded as top quality.

      Recent research has shown that these fats have a beneficial effect on health, because in its composition exist high levels of unsaturated fatty acids which contribute to reducing cholesterol.

      The Iberian pig is the animal that makes better use of dehesa (natural ecosystem), thereby transforming the nutritional elements with great performance and with the advantage of doing an absolutely natural way and respects the environment.

      The presence of fat, far from being a defect, it is a feature jealously sought because it is a symptom of genuine quality assurance and health.
The claw black (black foot) is a characteristic that is not always a determinant of quality or purity of race.

      From time of the Romans the magnificent qualities of hams and other derivatives of the Iberian pig was exalted, an animal adapted to the ecosystem where it operates: La Dehesa (natural open range).

      La Dehesa is an ancient form of farming that was practised by the Iberians and Celtics being perfected by the Romans later.

      Extremadura retains the largest and the best preserved extensions of dehesa around the world, and it is precisely this wise combination of grass and trees, mostly ilex and cork trees in enviable ecological balance which is one of the places with better adaptation to the natural breeding and Iberian pig fattening on the open range.

      The ilex is the queen of the Dehesa, a corpulent tree that can reach 25 metres tall while its size and shape are greatly modified through selective pruning to better exploit their potential. Its fruit is the acorn, extraordinarily rich in sugars and fats, along with pastures are feeding more choice that can provide the Iberian pig, only animal capable of assimilating with an optimal use this unique ecosystem.
