The Iberian ham is also
characterized by their content
of vitamins B1, B6, B12 and
folic acid, very beneficial to
the nervous system and vitamin
E, which acts as an antioxidant.
-
Vitamin B1 (thiamine).-
Vitamin B1 is essential for
energy production, for the
metabolism of carbohydrates and
fats, and for growth. Its main
function is the decarboxylation.
Vitamin B1 and heart: the
pronounced lack of B1 causes
cardiac dilation.
-
Vitamin B6 (Pyridoxine).-
It is essential for the
synthesis of many enzymes. It
enters on the metabolism of
amino acids, the synthesis of
transaminases and alkaline
phosphatase. His absence causes
fatigue, nervousness, fluid
retention and vomiting. The main
functions of vitamin B6 are:
transamination of amino acids,
the decarboxylation of amino
acids, deamination of amino
acids, and the synthesis of
gamma butyric acid (GAB), the
tryptophan metabolism and
transulfuration.
-
Vitamin B12 (Cobalamine).
- It is a vitamin present in
foods of animal origin. The B12
deficiency leads to anaemia
similar to the folic acid. It
involves part in the proteins,
sugar and fats metabolism.
Vitamin B12 is necessary to
obtain energy from food, for the
metabolism of amino acids, for
growth and development. The B12
involve in the synthesis of
myelin, a substance that recover
the nerves.
